Chew On This: White Chicken Chili

This past week it was freeeezzzziinnggggg. Thursday night it was super cold and snowed a lot. Friday was definitely a cuddle on the couch, want some hot yummy goodness day. I originally wanted to make this Tuscan Bean Soup, but I realized that I would need to cook it for much longer than I actually had. SO. I decided on this delish Busy Paleo Mom’s White Chicken Chili. I made a few changes to the recipe – I added cut celery, a bag of cannellini beans and fresh chicken breasts. Because of the beans I had to use almost 8 cups of chicken broth and simmered/slow boiled the chili for about 2 hours. I put the chicken in and boiled it for about 15-20 minutes. Then took it out, shredded it and put it back in after I poured the can of coconut milk in the pot!

I served the chili with this Winter Chop Salad with Roasted Brussels Sprouts. I added some arugula and romaine lettuce too.

All and all a delicious dinner on a cold, wintery day! Make it for your family!!!
