For the last 11 weeks I haven’t had pasta or tomatoes and I’ve missed them SOOOOO!! This week I’m incorporating tomatoes back into my diet to see how I feel. Yesterday I was supposed to eat 3 servings, but I actually only got to eat 2 raw slices on a bison burger for lunch. So I figured today I’d eat more and what better way than to make a pasta!!
This recipe spurred from the ingredients that were in the fridge. You can take this as a jumping off point and really add/omit anything you want!
